Merge Food Truck gearing up for business in Rochester

(ABC 6 News) – The Southern Minnesota Initiative Foundation (SMIF) has announced ten members of the first Prosperity Initiative cohort of 2022, a program that provides free coaching and training to minority entrepreneurs and one is in Rochester.

Merge Food Truck has been a project Eric Linningham has been working on for a couple of years now. He said he built the truck from scratch by hand.

Linningham is originally from Kansas City, Missouri and has culinary experience as a chef and sous chef. He hopes to get his name out there and to bring more variety to Rochester food trucks.

"I’m just trying to bring a little something different. My favorite meal of the day is breakfast. So you throw it into brunch which kind of goes with the concept of Merge — merging breakfast and lunch, merging different cuisines together so I just hope it brings a little variety, something a little different, something that people enjoy," Linningham said. "I feel like a food truck is a good start to get your ideas out there, get your name out there and build your brand."

Linningham said he will be serving pancakes, hashbrowns, eggs, biscuits and gravy, and cinnamon rolls.
